Mountain Man Breakfast Casserole

Ingredients

  • 1 bag frozen hash browns (any style)
  • 1 onion, chopped (I prefer Vidalia Onions)
  • 1 lb Sausage (I prefer turkey polsa kielbasa)
  • 1 dozen eggs
  • 4 cups shredded cheese

Option

  • Replace potatoes and onions w/ 2 bags of “Simply Potatoes” (Southwest or w/onions).
  • Replace frozen potatoes with leftover baked potatoes – cut in cubes

Directions

  • Prepare 24 coals and place 16 on bottom and 8 on top.
  • Brown Sausage (unless using pre-cooked or smoked sausage).
  • Pour off grease.
  • Add 1 stick butter and melt
  • Brown potatoes and Onions, turning to avoid burning.
  • Move 6 of the coals from the bottom to the top
  • Add smoke or pre-cooked sausage, if using.
  • Beat 1 dozen eggs and pour over the potatoes.
  • Cover and cook until set (approximately 40 minutes).
  • Cover with shredded cheese.
  • Remove oven from bottom coals and melt cheese.

Serve with your choice:

  • Salsa
  • Hot Sauce
  • Ketchup
  • BBQ Sauce
  • Season Salt
  • Chopped Green Chilies
