Mountain Man Omelet


  • ½ lb. country sausage
  • ½ lb. bacon
  • ½ large diced yellow onion
  • 2 cloves minced garlic
  • 1 chopped green bell pepper or any pepper of your choice
  • 1 cup chopped mushrooms
  • 8 eggs
  • ½ cup milk
  • 1 ½ cups grated cheddar cheese
  • Picante sauce, salt and pepper


  • Heat a 12 inch Dutch Oven (D.O.) over coals until bottom is very hot.
  • Fry sausage until brown, then remove.
  • Cut bacon into 1 inch slices and fry in D.O. until brown.  Remove excess grease from D.O.
  • Add sausage, onion, garlic, bell pepper, and mushrooms.  Sauté until vegetables are tender.
  • Mix eggs and milk and pour into D.O.
  • Cover and bake at 325 degrees, using 8 coals under and 15 on top for 20 minutes, or until eggs are firm.
  • Spread cheese over eggs, cover and let stand until cheese is melted.  Serve with favorite sauces or toppings.
