Split Pea Soup

  • 2 cups dry spit peas
  • 1/4 lb. bacon, diced
  • 1 small onion, chopped
  • 1 tsp salt
  • Place peas in 2 1/2 cups off water and soak overnight.
  • Brown bacon and crumble it. ¬†Add bacon, salt and onion and cook
  • covered over a slow fire for 1 hour.
  • Inspect occasionally, ¬†adding small amounts of water if needed, to thin soup while it cooks.
Serves 8
